Instructions:
In a large mixing bowl, combine the sliced onions, minced garlic, Dijon mustard, lemon juice, olive oil, black pepper, red pepper flakes, and salt to taste.
Add the chicken thighs to the bowl and toss to coat them evenly in the marinade.
Cover the bowl with plastic wrap and refrigerate for at least 2 hours, or overnight if possible.
Preheat a skillet or grill pan over medium-high heat. Remove the chicken from the marinade and discard any excess marinade

While the chicken is resting, pour the remaining marinade into the skillet or grill pan and cook over medium heat for about 5 minutes, or until the onions are soft and the sauce has thickened slightly.
