Equipment:
Large pot with a lid

Instructions:
Rinse the rice in cold water until the water runs clear. Place the rice in a large pot and add enough water to cover the rice by about 1 inch. Bring the water to a boil, then reduce the heat to low and cover the pot with a lid. Cook the rice for 20-25 minutes, or until it is tender and fluffy. Fluff the rice with a fork and set aside.
To make the groundnut soup, heat the palm oil in a skillet over medium-high heat. Add the chopped onion and cook for 2-3 minutes, or until the onion is translucent. Add the minced garlic and grated ginger and cook for another minute.
Add the groundnut paste to the skillet and stir well. Add enough water to the skillet to make a soup-like consistency. Add the paprika, cumin, coriander, and salt to taste. Reduce the heat to low and let the soup simmer for 10-15 minutes.
To make the spicy chicken or beef, heat the vegetable oil in a skillet over medium-high heat. Add the chopped onion and cook for 2-3 minutes, or until the onion is translucent. Add the minced garlic and grated ginger and cook for another minute.
Add the chicken or beef to the skillet and stir well. Add the cumin, coriander, paprika, cayenne pepper, and salt to taste. Cook the chicken or beef until it is browned on all sides and cooked through.
To serve, spoon the groundnut soup over the cooked rice and top with the spicy chicken or beef.
