Gbegiri Soup Recipe

Ingredients:
1 cup of black-eyed beans, rinsed and soaked overnight
2 cups of water
1 onion, chopped
2 garlic cloves, minced
1 teaspoon of salt
2 tablespoons of palm oil
2 cups of chopped spinach
Pepper to taste

Instructions:
Drain the soaked beans and rinse them thoroughly.
In a pressure cooker, add the beans, water, onion, garlic, and salt. Cook on high pressure for 20-25 minutes or until the beans are tender.
Once the beans are cooked, let them cool slightly and then transfer them to a blender. Add the palm oil and blend until smooth.
Pour the blended mixture back into the pressure cooker and add the chopped spinach. Cook on medium heat for another 5-7 minutes, stirring occasionally.
Add pepper to taste and serve hot with a side of eba (cassava flour) or fufu.
