Gbegiri Soup Recipe

Ingredients:

  • 1 cup of black-eyed beans, rinsed and soaked overnight

  • 2 cups of water

  • 1 onion, chopped

  • 2 garlic cloves, minced

  • 1 teaspoon of salt

  • 2 tablespoons of palm oil

  • 2 cups of chopped spinach

  • Pepper to taste

Instructions:

  1. Drain the soaked beans and rinse them thoroughly.

  2. In a pressure cooker, add the beans, water, onion, garlic, and salt. Cook on high pressure for 20-25 minutes or until the beans are tender.

  3. Once the beans are cooked, let them cool slightly and then transfer them to a blender. Add the palm oil and blend until smooth.

  4. Pour the blended mixture back into the pressure cooker and add the chopped spinach. Cook on medium heat for another 5-7 minutes, stirring occasionally.

  5. Add pepper to taste and serve hot with a side of eba (cassava flour) or fufu.

  • Use a vegetable oil like canola or olive oil instead of palm oil for a healthier option.

  • Add chopped vegetables like carrots and bell peppers to the soup for added nutrients and fiber.
