Jollof Rice Recipe

Jollof Rice is a popular West African dish that is flavorful, aromatic and easy to prepare. It is made with rice, tomato paste, spices, and vegetables. Here is a detailed recipe for Jollof Rice that you can prepare at home. Ingredients:
2 cups of long grain rice
2 cups of water
1 can of tomato paste (6 oz)
1 large onion, chopped
1 bell pepper, chopped
2 garlic cloves, minced
1 teaspoon of ginger, minced
2 tablespoons of vegetable oil
1 teaspoon of salt
1 teaspoon of black pepper
1 teaspoon of smoked paprika
1 teaspoon of cumin
1 teaspoon of curry powder
1 teaspoon of thyme
1 teaspoon of dried parsley
1 teaspoon of dried basil
Instructions:
Rinse the rice in a sieve under cold water until the water runs clear. Drain and set aside.
In a large pot or Dutch oven, heat the vegetable oil over medium-high heat.
Add the chopped onions, bell pepper, garlic and ginger to the pot. Stir and sauté until the vegetables are soft and fragrant, about 5 minutes.
Add the tomato paste to the pot and stir until it is well combined with the vegetables. Cook for another 5 minutes.
Add the spices (salt, black pepper, smoked paprika, cumin, curry powder, thyme, dried parsley, and dried basil) to the pot and stir well.
Add the rice to the pot and stir until it is well coated with the tomato mixture.
Pour the water into the pot and stir. Bring the mixture to a boil.
Reduce the heat to low and cover the pot with a tight-fitting lid. Simmer for 20-25 minutes or until the rice is tender and the liquid has been absorbed.
Fluff the rice with a fork and serve hot.
