2 cups of black-eyed beans
1 onion, chopped
2 bell peppers (red and green), chopped
1-2 scotch bonnet peppers, chopped
1/2 cup of vegetable oil
2 teaspoons of salt
2 teaspoons of ground crayfish
2-3 seasoning cubes (optional)
2 cups of water
Banana leaves or aluminum foil
Instructions:
Soak the black-eyed beans in water for about 4-6 hours or overnight. Drain the water and rinse the beans.
Add the beans to a blender or food processor with the chopped onions, bell peppers, scotch bonnet peppers, vegetable oil, salt, ground crayfish, and seasoning cubes (if using).
Blend the mixture until smooth, adding water as needed to achieve a smooth consistency.
Pour the mixture into a bowl and mix well. Adjust the seasoning if necessary.
Cut the banana leaves or aluminum foil into 6-inch squares and fold them into small bowls or cups.
Pour the bean mixture into the banana leaf cups or aluminum foil cups, filling them up to about 2/3 full.
Place the cups in a steamer and steam for about 45 minutes to 1 hour, or until the moin moin is firm and cooked through.
Remove the cups from the steamer and let the moin moin cool down before serving.
