S'mores are a beloved American campfire treat that consist of a toasted marshmallow and a piece of chocolate sandwiched between two graham crackers. This recipe puts a fun twist on the classic dessert by turning it into macarons - delicate French cookies that are filled with a marshmallow buttercream and a chocolate ganache.
Ingredients: For the macaron shells:
1 cup powdered sugar (available on Amazon: https://www.amazon.com/Wholesome-Sweeteners-Organic-Powdered-Sugar/dp/B01DL90MZ8)
3/4 cup almond flour (available on Amazon: https://www.amazon.com/Barney-Butter-Almond-Flour-13/dp/B07H9FS7VX)
2 large egg whites
1/4 cup granulated sugar (available on Amazon: https://www.amazon.com/Domino-Sugar-Granulated-4LB/dp/B01D0LEXRA)
Pinch of salt
For the marshmallow buttercream:
1/2 cup unsalted butter, at room temperature
1 cup powdered sugar
1/2 teaspoon vanilla extract (available on Amazon: https://www.amazon.com/Nielsen-Massey-Madagascar-Bourbon-Vanilla-Extract/dp/B0005XQO6U)
1/2 cup marshmallow fluff (available on Amazon: https://www.amazon.com/Marshmallow-Fluff-Canister-7-5-Ounce/dp/B008DJRNU4)
For the chocolate ganache:
4 ounces semisweet chocolate, chopped (available on Amazon: https://www.amazon.com/Ghirardelli-Semisweet-Chocolate-Baking-12oz/dp/B00KAJ47N0)
1/2 cup heavy cream (available on Amazon: https://www.amazon.com/Horizon-Organic-Heavy-Cream-16/dp/B000F8JIIC)
Preheat your oven to 325°F (160°C) and line two baking sheets with parchment paper.
In a medium bowl, sift together the powdered sugar and almond flour. Set aside.
In a large bowl, beat the egg whites until they start to foam. Add the granulated sugar and salt, and continue to beat until stiff peaks form.
Gently fold the almond flour mixture into the egg whites until fully combined.
Transfer the batter to a piping bag fitted with a round tip.
Pipe the batter onto the prepared baking sheets, making circles that are about 1.5 inches (4 cm) in diameter.
Let the macarons rest at room temperature for about 30 minutes. This will help them form a crust, which will give them their signature texture.
Bake the macarons for 12-15 minutes, or until they are set and slightly golden on the edges. Let them cool completely on the baking sheets.
While the macarons are cooling, make the marshmallow buttercream. In a large bowl, beat the butter until it is light and fluffy. Add the powdered sugar and vanilla extract, and continue to beat until fully combined.
Add the marshmallow fluff and beat until the buttercream is light and fluffy.
Transfer the buttercream to a piping bag fitted with a round tip.
Once the macarons are cooled, pipe a dollop of buttercream onto half of them. Top each dollop with a small piece of chocolate.
Make the chocolate ganache by heating the heavy cream in a small saucepan until it starts to simmer. Remove the cream from the heat and add the chopped chocolate. Let it sit for a minute, then whisk until the chocolate is fully melted and the ganache is smooth.
Spoon a small amount of ganache onto the other half of the macarons.
Sandwich the two halves together, pressing gently to create a s'mores macaron.
Store the macarons in an airtight container in the refrigerator for up to 3 days.

Healthy Alternatives: For a healthier version of this recipe, you can try substituting the powdered sugar with a sugar alternative like erythritol or stevia. You can also use dark chocolate instead of semisweet to reduce the sugar content. Additionally, you can try using coconut cream instead of heavy cream for a dairy-free option.
