S'mores Macarons Recipe

S'mores are a beloved American campfire treat that consist of a toasted marshmallow and a piece of chocolate sandwiched between two graham crackers. This recipe puts a fun twist on the classic dessert by turning it into macarons - delicate French cookies that are filled with a marshmallow buttercream and a chocolate ganache.

  1. Preheat your oven to 325°F (160°C) and line two baking sheets with parchment paper.

  2. In a medium bowl, sift together the powdered sugar and almond flour. Set aside.

  3. In a large bowl, beat the egg whites until they start to foam. Add the granulated sugar and salt, and continue to beat until stiff peaks form.

  4. Gently fold the almond flour mixture into the egg whites until fully combined.

  5. Transfer the batter to a piping bag fitted with a round tip.

  11. Transfer the buttercream to a piping bag fitted with a round tip.

  12. Once the macarons are cooled, pipe a dollop of buttercream onto half of them. Top each dollop with a small piece of chocolate.

  13. Make the chocolate ganache by heating the heavy cream in a small saucepan until it starts to simmer. Remove the cream from the heat and add the chopped chocolate. Let it sit for a minute, then whisk until the chocolate is fully melted and the ganache is smooth.

  14. Spoon a small amount of ganache onto the other half of the macarons.

  15. Sandwich the two halves together, pressing gently to create a s'mores macaron.

  16. Store the macarons in an airtight container in the refrigerator for up to 3 days.
