2 medium-sized yams, peeled and chopped

2 tablespoons of palm oil

1 medium-sized onion, chopped

2 garlic cloves, minced

1 red bell pepper, chopped

1 green bell pepper, chopped

2 tomatoes, chopped

1 tablespoon of tomato paste

1 teaspoon of thyme

1 teaspoon of curry powder

Salt and pepper to taste

2 cups of vegetable broth


In a large pot, boil the chopped yams until they are tender. Drain and set aside.
